  • 1/2 tsp roasted cumin powder

  • 1/2 tsp red chili powder

  • Salt to taste

  • 2 tbsp chopped coriander leaves

Ingredients for Spicy Pani

  • 1/2 cup tamarind pulp

  • 4 cups water

  • 1 tbsp roasted cumin powder

  • 1 tsp black salt

  • 1 tsp chaat masala

  • 1/2 tsp red chili powder

  • 1 tbsp jaggery or sugar

  • 1/4 cup fresh mint leaves

  • 2 green chilies

  • 1-inch piece of ginger

  • Salt to taste

Ingredients for Sweet Chutney (Optional)

  • 1/2 cup tamarind pulp

  • 1/4 cup jaggery or sugar

  • 1/2 tsp roasted cumin powder

  • 1/4 tsp black salt

  • 1/4 tsp red chili powder

  • 1/2 cup water

Step 1: Make the Puris

  1. Mix semolina, flour, baking soda, and salt in a bowl.

  2. Add water slowly to form a stiff dough. Knead for 5 minutes until smooth.

  3. Cover with a damp cloth and rest for 20 minutes.

  4. Roll small dough balls into thin, 1.5-inch circles.

  5. Heat oil on medium. Fry puris until golden and puffy.

  6. Drain on paper towels. Store in an airtight container.

Step 2: Prepare the Filling

  1. Mix mashed potatoes, black chickpeas, and onion (if using) in a bowl.
